I recently watched the new Jurassic World movie. It was NOT good. I could barely pay attention and it’s kind of disappointing because the first Jurassic Park movie was really good.
Who doesn’t like seeing dinosaurs on the TV? But for some reason this new movie was just about giant locusts??
This isn’t a themed post about movies though, it’s about soup. If a movie has a scene with soup in it though, I’ll probably talk about it in a post.
Yesterday I made a personal recipe for Chicken and Rice soup that ended up being just a remake of chicken tortilla soup. It still tasted good, but it sort of wasn’t an original soup.
Today it will be a brand new soup for sure
Minestrone
A vegetable soup. Italian. (Apparently). I’ve never had this soup before, and my dad lended me his instant pot recently. I found a recipe using the instant pot, so I figured why not make this soup using that?

What you need
- Instant Pot
- Olive Oil
- Zucchini
- Celery
- Carrots
- Potatoes
- Kidney Beans
- Vegetable Broth
- Diced Tomatoes (If you don’t have fresh tomatoes, store bought is fine)

Chop up the carrots, celery and onions
Set the instant pot to sauté, and add olive oil, then throw in chopped up vegetables
Sauté for a few minutes until soft

Add the rest of the ingredients
The beans are leftover from the chicken tortilla soup I made a couple days ago, so I’m glad I’m able to continue using up all the ingredients instead of it going to waste.

Stir vigorously, making sure all ingredients are mixed together
I personally added garlic powder as well

Put the lid on and seal it
Press the “pressure cook” button, and set time for five minutes
Wait 30-ish minutes
The pressure cooker takes a bit to warm up, then will start cooking
That’s actually all that is needed to be done for making the soup, so here’s a few things you can do while you wait:

Clean up your mess from cutting

Take out the trash

Pet your cat (if you don’t have one at your place, store bought is fine)

Take a view at the giant rubber duck that’s a block away (if you don’t have your own, store bought is fine)

And by the time you’re done with all that the pressure cooker should be done!
Be sure to switch the release valve to “venting” so the excess pressure releases into steam
Once all the steam is gone, you can open the lid and serve

I added parmesan cheese and parsley to mine, as well as salt and pepper
It didn’t have a whole lot of taste until I added these, so I highly recommend it.
