So I hope people reading yesterday’s miso soup recipe didn’t think it was “lazy” or “uninspired”.
I put a lot of thought into these soup recipes.
You try to come up with 30 different soup recipes and take the time to make them every day, and then take another hour or so to write about it, all while working around your regular hours at work. It’s hard stuff!
Today we’re going back to the basics, though. A bunch of ingredients, a pot, and some broth. Just a regular homemade soup.
Chicken and Rice Soup…?
So this soup is kinda unique, because I’m not actually following a recipe for it.
I’m trying to use up a lot of whatever ingredients I have leftover from previous soups, and making a new one, and I thought why not throw in some rice to it as well.

What you will need
- Leftover chicken shreddings
- Leftover corn and tomato mix
- Garlic
- Diced onion
- Olive Oil
- Chicken Broth
- Rice (I decided to buy microwave rice)
- Misc. spices
- Oregano

Follow the instructions on the pre-packaged rice.
Be sure not to trip over your cat while heading to the microwave.

While the rice is cooking for 90 seconds in the microwave, heat up the oil in a small pan.
Add the onions, and let soften for about a minute, then add the garlic, and stir it together.

Add in the corn/diced tomatoes mix and chicken broth. Bring to a boil, then reduce heat.

Add the chicken, and stir together, letting the chicken heat up again.

Add the miscellaneous spices, to your personal preference of taste.

By now the rice should have been heated up thoroughly in the microwave. Remove it, and mix it together in the bag with a fork.

Pour in the rice, and realize that the flavoring the rice packet has makes the soup really, really, red.
Stir a lot because the rice needs to be broken up and is most likely still chunky sitting in the soup.

And there we go! Chicken and rice soup. After tasting it, I realize that it’s basically a chicken tortilla soup 2.0 minus the beans and tortillas, but what’re you going to do.
The spices that I added are probably my go-to when cooking any meal that’s not heavy on instructions, so I guess I just made the same soup again, only different this time.
