Souptember Day 27

Hope everyone had a great birthday soup yesterday

I know I did

We are now in the last four days of Souptember

I’ll be honest, this is not exactly how I wanted the month to go

Hard getting ingredients when you haven’t gotten your money to get them, and my car repairs haven’t helped

I paid $560 out of pocket because insurance didn’t send the check yet, and now I still can’t cash that check!

It’s fine

I’ll get my car back soon, hopefully the repairs will be done later this week

Let’s get on to the soup

Beef Stew

I’m using the Instant Pot again because it’s been a while, and thought it could be more fun to use than normal pots and pans

What you will need

  • Beef stew meat
  • Broth
  • Salt
  • Pepper
  • Dijon mustard
  • Carrots
  • Potato
  • Onion (don’t have one)
  • Celery (also ran out of that)
  • Tomato Sauce/paste
  • Olive oil
  • Garlic
  • Worcestershire sauce (I don’t have it)
  • Rosemary
  • Mushrooms (optional and I don’t have it)
  • Cornstarch
  • Water

Sauté the onions and garlic in the instant pot with olive oil

I didn’t actually have any onions I could chop, and couldn’t go to the store for one, so I just used a TON of minced onion

Add in the broth, mustard, tomato, rosemary, and Worcestershire sauce

I actually don’t have plain rosemary and I don’t have Worcestershire sauce so I needed to figure out a substitute

Italian seasoning has rosemary in it, so I just used that

And for a substitute for the sauce that’s hard to pronounce

Uhh

I don’t know…

I have soy sauce and red wine vinegar in the pantry?

I guess that could work, right?

We’ll see

Add in the beef and stir it all together

Put the lid on and make sure the post is sealed

Hit cancel to reset the pot, and press the beef/stew button and set it for 30 minutes

(ignore that there’s a SOUP button and a separate STEW button)

When the pot is pressurizing, take the time waiting to chop up your vegetables

I’m only chopping up a potato and some broccoli

Broccoli wasn’t on the list, but I’m trying to use what I can with what I have

If you don’t have baby carrots like I do, chop up the carrots to be close to that size

When it is done cooking, be sure to flip the switch on top to release the pressure

It’s fun to see all the steam come out

Add in all your vegetables

I added my potatoes, broccoli, and whole baby carrots

Reset your instant pot and and seal the lid again

Press the PRESSURE COOK button and set it for three minutes

Once it’s done cooking again you can watch all the fun steam release

Mix your cornstarch and water in a separate bowl to add to the soup

This will thicken it a bit

Stir it into the stew and seal the lid again

This is just to let it all thicken for about five minutes

And there you go!

Some nice beef stew

I was actually worried on what the soy sauce and red wine vinegar would do to the flavor but it actually made it taste really good!

So I guess do that if you don’t have that sauce like I did
