Souptember Day 14

In yesterday’s soup post, I showed you how to make breakfast egg soup, which was pretty good in my opinion

So in Marvel’s Endgame, right at the beginning when we see Thanos, he’s making soup I guess

Chili

This is one of my favorite soups to cook, honestly. When I started to live on my own for the first time in college, cans of chili were so cheap at the grocery store, and I loved to buy a few and always add more ingredients for more flavor

This recipe will not be using any chili cans, however. Just ingredients

What you will need

  • Hamburger meat
  • Chili beans
  • Diced tomato
  • Corn
  • Onion
  • Garlic
  • Beef stock
  • Jalapeño
  • Bacon bits
  • Paprika
  • Cumin
  • Chili powder
  • Cayenne Pepper
  • Oregano
  • Sugar (optional)

Dice up the onion and set aside for later

I used a WHOLE onion this time because I’m wanting leftovers for sure

Cook and break up your pound of hamburger meat

I personally added some of Freddy’s seasoning to the meat to flavor it up a bit before adding it to the chili

I don’t think it’s too necessary, but I thought it might taste good, and apparently Freddy’s has their amazing salt in little take home packets now??

Drain your meat

I left mine sitting there in the sink for a bit while I went back to the onions

In a large pot, layer the bottom with olive oil, and add the onions

Sauté for a few minutes until they start to be clear

(I also think it would be better with red onions, but I didn’t have any at the time)

Add garlic and cook for a few more minutes

Add your broth, beans, tomatoes, and corn

Bring to a boil, and occasionally stir

While boiling, chop up your jalapeño

I personally decided to leave in most of the seeds because I like spicy foods, and the rest of the ingredients will bury most of the spice anyway

Once the soup has boiled for a bit, add in your meats: the hamburger and bacon

Reduce the heat to a low simmer, so the soup can thicken

Add all your spices (minus oregano)

There is no set measurement on how much of the spices are needed, but I added a lot, and often taste-tested it, and thought it needed even more

This is actually my own recipe, and I’m not measuring a thing, just doing everything based on flavor, so it’s a personal preference on how much spice you want to add

I also decided to add a bit of sugar in my chili

Not as much as the other spices, but I personally think it gives it a nice sweetness to all the spice

Continue stirring and letting the chili thicken

When close to serving, add the jalapeño bits and oregano, and mix together

Feel free to do a taste test again and see if more spices need to be added

I also added some saltines and cheddar cheese to reduce the heat and add more thickness to the chili, and I think it turned out really well

Chili is great
