Souptember Day 3

Back at it again for some more soups. Yesterday I made some broccoli and cheddar soup, and once again today I am making a brand new soup.

(Side note: I always do this writing at night after work, and my cat always is BEGGING for my attention when I’m writing)

Clam Chowder

I enjoy eating clam chowder, but I’ve never actually made it myself. I usually just buy pre-made cans of the soup, and then I spice it up and add crackers. I never made yesterday’s soup before too, and it turned out really good, so this one has to be the same, right?

Making this many soups helps with organizing ingredients, because I’m using the same carrots from the chicken noodle, and the other half of the onion from the broccoli cheddar

What you will need:

  • Clams
  • Clam juice
  • Carrots
  • Onion
  • Celery
  • Cream
  • Flour
  • Red Wine Vinegar
  • Potato

Cut up the celery, carrots, onion, and potato. Unlike the onions and broccoli from yesterday, it’s totally fine to mix them all together.

Put the chopped vegetables in a skillet, and pour the clam juice over it. Drain the can of clams into the skillet, and add water to cover. Cook until softened.

As that’s going, I got the saucepan ready and added butter and flour to it. I feel like this is where I messed up though, because it seems to have just mixed together, and made chunky flour? I kept it, though and tried to work with it.

Add cream, and if your chunky flour is like mine, get a fork to try and break it up in the cream.

Add the vegetable and clam juice mix into the cream and chunky flour. Continue to try and break up the flour.

Add the can of clams.

Worry about the quality of this soup, and how this might be the first bad soup of the month.

Decide to pour in more clam juice because you think it’s not clammy enough.

Cook a little while longer, the take off heat and add salt, pepper, cayenne pepper spice, and the red vinegar.

I didn’t feel too confident about this soup honestly. Didn’t seem thick enough compared to the canned versions of the soup. It’s also not super great that I somehow made two servings of the soup, but it wasn’t awful, so I’ll eat it twice.

It certainly wasn’t the best soup so far, but hopefully all the future soups will be at this level or better. IF yours seems to be more milky and less thick like mine, you might want to add crackers to it.
